The weekend mood starts with a healthy dinner. Or at least it does so for me. Today’s special is the simplest corn salad ever.
Fresh Sweet Corn Salad
Time to prepare : 5 mins
Serves : 1
You will need :
Two ripe tomatoes
Two peeled cucumber
Sweet corn from a cob
Coriander leaves (5-7)
Salt and Pepper
Steps to follow:
1. We start with the sautéing of corn in a frying pan. Use about half a table spoon of olive oil, no more. Sauté for about 3-4 mins, add salt and Pepper.
2. Chop tomatoes and cucumbers into medium pieces.
3. Mix with sautéed corn, add chopped coriander leaves.
Toss well and serve.
And here you go.
The best part about this salad is it has absolutely nothing unhealthy, like many others. It’s a nonfat salad. A little olive oil helps with protein build up, the tomatoes help making you full for longer and cucumber prevents water retention. And the corn, I’m sure has many many health benefits but I added them for a little spice.
